1 Cup Color Tapioca Pearls(large, cooks in 5 minutes according to the pack)
9 Cups Water
1 Can Coconut Milk
2 Tablespoons Caster Sugar
1 Teaspoon Vanilla Extract
1 Mango
METHOD
Bring Water to the boil. Place tapioca pearls in the water. Once all the pearls float, reduce heat to medium and cook for 8 minutes. Once Cooked, remove tapioca pearls and rinse. Soak in cold water for 1 minute. Drain again.
Meanwhile, warm up coconut milk, sugar and vanilla extract. Allow the milk to reduce until it thickens.
Divide milk and tapioca pearls among different cups. Add pieces of fresh mango to the cups. Let the cups sit for 30 minutes to allow coconut milk to coat the tapioca pearls.
