INGREDIENTS
1 2/3 Caster Sugar
1/3 Cup Glucose Syrup
1/3 Cup Water
2 Teaspoon Bicarbonate Soda
METHOD
*Have a dish lined with non-stick baking paper ready*
Place caster sugar, water and glucose syrup in a large non-stick pot. Mix to dissolve the sugar at the beginning and bring to the boil. Watch this syrup. As it starts to turn yellow, take it off the stove. Add the bicarbonate of soda and mix quickly with a whisk. This causes the mixture to froth up and triple in size.
Quickly pour into a pan lined with non-stick baking paper.
Refrigerate for 1 hour.l.
