INGREDIENTS
2 Oranges-Blood or Navel, thinly sliced
1 Cup Sugar
1 Cup Water
250g Dark Cooking Chocolate
METHOD
Place water and sugar in a pot.
Start heating the water until all sugar is melted. Cut orange into thin slices. Place orange slices in the pot. Bring down the heat so that mixture is just simmering. Make sure the orange slices stay immersed while cooking. Keep stirring and pushing the slices into the mixture for the next 45 minutes. Keep cooking the orange slices until the white pith of the orange slices turn translucent. Once done, place orange slices on a wire rack to dry.- Once dry, this can take 24 hours, temper the dark chocolate. Once tempered, let it cool down for 5 minutes. Dip each orange 1/2 way into the chocolate and place them on non-stick wax paper to dry.
