INGREDIENTS 2 1/2 Cup carrots (pulsed in a food processor) 1 Cup Walnuts 1 Cup Pitted Dates 1/2 Cup Coconut chips 1 Tablespoon Coconut Syrup METHOD Shred carrots in a food processor. Add walnuts, coconut and dates and mix until the ingredients come together. Add the coconut syrup. Use your hands to form small balls of this mix. These can be refrigerated and eaten at a later stage. Final ingredient is very soft and moist. *If you like something firmer with a harder exterior, place in an oven at 170 degrees Celsius for 30 minutes. (bottom picture) |
