INGREDIENTS
Filling:
2 Cups Blackberries
2 Cups Blueberries
1/2 Cup Sugar
1 Tablespoon Cornflour
1 Lemon, juiced
1 Teaspoon Cinnamon
CRUMBLE:
Lemon rind
3 Cups Plain Flour
1 Cup Sugar
1 Cup Butter
1 Teaspoon Baking Powder
1 Teaspoon Vanilla
METHOD:
To make base and Crumble:
1. Process sugar and butter until just combined
Then add the rest of the ingredients
Divide dough in 1/2. Place half into a lined tin, pressing the dough together.
For the filling, mix all the ingredients together in a bowl except cornflour and lemon.
Stir cornflour in the lemon juice to dissolve before pouring into the filling mixture.
Add Filling on top of base.
Place the rest of the crumble on top of fruit filling.
Cook in moderate oven until crumble goldens.
