COCONUT LAYER
7 Dried Apricots
10 Blackberries
Flesh of one Fresh Coconut
1 Cup Dried Cranberries
1/4 Cup Coconut Oil
3 Teaspoon Coconut Sugar
CHOCOLATE GANACHE
1/2 Cup Raw Dark Cacao Powder
1/4 Cup Agave Nectar
1/2 Cup Pre-Soaked Cashews
1/2 Cup Coconut Oil
METHOD
For the coconut layer, mix all ingredients together until it starts to stick together. Pour mixture into a pan lined with non-stick baking paper and press down. Refrigerate for 30 minutes.
For the chocolate layer, blend all the ingredients together. Once you have a smooth mixture, apply unto the coconut layer.
